Marzipan

Marzipan is almost the most important Christmas ingredients, and just think it's so easy to make it yourself.
I love December, It is so cozy with street lighting, Christmas events, Christmas confections.

Last year was the first time I ever made marzipan, and it is just so super easy (If you have a food processor or blender)

I have for years tried to make a version with peeled almonds and one with almonds in shell. The version with the need to become fairly dry, but I still got something good out of it when I mixed lemon compound in and made these lemon marzipan balls. One could also try to mix something else in raspberry or strawberry jam may ? or maybe just a little liquid.

I have chosen to sweet with dates, but you can also use applesauce and syrup, and of course, one can use icing sugar if you do not care if it is natural fruit sugar or not.

RECIPE – Homemade marzipan

INGREDIENTS

250 g peeled almonds
4-7 dates (as needed)
A. bit of water if needed

APPROACH

  • Put the almonds in a bowl and pour boiling water over and let them stand 5 min
  • Drain the almonds and pour boiling water all at once and let it stand a few minutes
  • Drain and peel the Almonds
  • Put the almonds in a food processor and run until they are completely fine
  • Put dates in and continue the machines ( NB! Remember to remove the stones)
  • It is of course a matter of taste how sweet you would marcipanen, so put the dates in as needed
  • If the mass doesn't feel smooth, add a little bit of water (organic dates are often quite dry)
  • Take the mass up and form the, and put in sealed container and put in the refrigerator.
  • The mass will be pretty oily by the oil from the tonsils

  1. How long do you think it can keep refrigerated…? Would like to do it now, and only use for Christmas 😉 if allowed to stand sooo long 😀

    1. Hi.

      My guess is about 2 weeks if the container is near, but it's pretty fat of almond oil so I do not think it time to dry out, so it may go, it's July in a minute 😉
