Whoa where I was happy (almost happy) Since yesterday i saw Kale on the shelves in the Net. I've missed it so much since it stopped in spring. Curly kale salad is my absolute favorite salad, and to think I almost ate it every day throughout the winter.
It is organic Kale in leaves they had in the store, so I've even chopped into small pieces. But when the season really starts, both COOP and Net finished washed and chopped Kale. Although the chopped and washed is not organic, I must admit that I use it, Since it's so easy just to pour it out of the bag.
This salad version with oranges and toasted almonds, I soon made a part year. It is a variation of a salad I made for really really many years ago, Yes even before I moved to the United States. In the salad I used only Chinese cabbage instead. Fortunately, I got the idea to try with Kale which is much healthier and tastes so much better.
RECIPE – Curly kale salad with toasted almonds
INGREDIENTS
Fresh Kale
Oranges
Almonds
APPROACH
- Wash and chop green cabbage fine (or purchase finished minced as found in the season with COOP & NET)
- Peel and chop the oranges into small pieces
- Chop the almonds and toast them in a dry pan until they are lysebryne
- Mix the Kale and oranges
- Squeeze the juice from the 1/2-1 Orange over salad
- Garnish with almonds
