Quick easy and flavorful vegetarian dish with red lentils, chickpeas and lots of vegetables

I've got a Master Chef challenge of my boy yesterday, and are reasonably happy with what I got concocted today. My boy was accidentally come to open a can of peeled tomatoes AND a can of chickpeas, he would open a can of kidney beans to make a snack for herself with salt cooked kidney beans. He gave me therefore a Master Chef Challenge, to find a right where I needed chick peas and peeled tomatoes (we are not in favor of food waste at home).

I first thought of pasta and some tomato sauce + a salad with chickpeas, but then our good cottage neighbor with the perfect proposal; something Indian…..of course!! absolutely perfect, I thought, I knew there was a bag of red lentils here in our cottage. So I improvised with what we had in the fridge and on the spice shelf. The result has been very good, tasteful and light and healthy. One can easily select some other vegetables and other spices, but I used what we had.

Serve on rice.

RECIPE – Red lentils with vegetables

INGREDIENTS

1 teaspoon caraway (not cumin)
2 teaspoon curry powder
2 TSP paprika
1 helfed garlic or 2-3 ALM bold
1 onion, cut into 4 pieces (I spent a whole fresh red onion)
4 tomatoes chopped
1 red pepper snack or ordinary red pepper
1 canned peeled tomatoes
1 canned chickpeas
200 g of washed red lenses
5 dl vegetable stock
250 g fresh green beans
A medium size blomskålshoved
A bunch of fresh coriander

APPROACH

  • Clean / wash the red lenses so they are ready
  • Grating come gently in a frying pan to the smells little nøddeagtigt
  • Pour curry and paprika to the pan and rack cards and turn off the forehead
  • Blend spices in a small spice blender(hoes to hand blender) and pour back into the pan
  • Chop the garlic and onions in the mini chopper
  • Cut the red pepper into pieces
  • Heat oil in saucepan or saute pan
  • Fry the onion and garlic and pepper, then add the spices and the last tomatoes
  • Add the peeled tomatoes
  • Add 5 dl vegetable broth and cook
  • Add the cleaned red lentils
  • Let it boil a little
  • Clean and chop the bottom fresh coriander
  • Wash and clean the beans, the ends of the cutting edge and part of them 3
  • Cleanse us share the cauliflower into small florets
  • Add the cauliflower and beans and half the cilantro and let simmer seen 15-20 min
  • What lynx, is the white jasmine rice, they have only about 15 min
  • Taste right with salt and pepper
  • Sprinkle with the other half of the cilantro and serve on rice
