Just Sooo good that you want to eat them
Since we love ice cream in this family I thought I would try a new version, a icecream sandwich. I made a portion of last week and it was good, but I thought the biscuit could be better and thinner. So I improvised and made absolutely completely for on the recipe. And this time I just hit just right with my attempt, they were so good. the biscuits are really delicious, very crisp and filled with cocoa, since I dobblede the content from the last round.
RECIPE – ICECREAM SANDWICH WITH COCOA BISCUITS
INGREDIENTS
100 g melted butter
280 (g) brown sugar
2 teaspoon vanilla sugar, or vanilla extract
2 eggs
1/4 tsp salt
1/2 TSP baking soda
100 g cacaopulver
250 (g) flour (I use always spelt flour)
APPROACH
The biscuits
- Mix all ingredients (EVS. dry stuff together first) and run in the mixer
- The dough is taken up by the bowl and kneaded together finally in hand to a fixed lump
- If the dough is too hard to assemble, you can add a bit of cold water
- Style, if desired. the dough about an hour in the fridge so that it is easier to roll out
- Rolled out approximately 2 mm (I have a Joseph Joseph rolling pin where you can “set” 2 mm on the side)
- Cut them with a glass or a cookie cutter (I've used approximately 7,5 cm in diameter)
- Make little holes with a chopstick or other pointy things
- Bake for 10 min. at 200 ° c (they must not be black at the edges)
- Cool on wire rack
- Be then in the freezer so they are cold when the ice comes from

- Make a liter vanilla icecream, recipe is here ( either in the IceMaker or whip the cream into foam and freeze in the form)
- I tried two different methods
- The first method was that I poured ice in a form and 2 cm in thickness. When the ice cream was half frozen and fixed, I die-cut ice with the same form as the biscuits, then I placed the die-cut piece of ice cream between two biscuits and back in the freezer.
- The second method was, I put a scoop of ice cream on a biscuit and squeezed it together between the two biscuits. It will be best if you wait to scrape/cut the excess ice away to the sandwich has been in the freezer and the ice is completely frozen.
- It is important that issandwichene does not get squashed once they are put in the freezer. When the ice is not completely frozen yet one can easily get squashed/pressure ice out of them (speaking from experience). When they are completely frozen later, they can easily be stacked in a box.
I think the die-cut sandwiches looked the best, the edges were straight and looked great. , But if you wait to cut the other to to after the ice is completely frozen, it becomes actually also quite nicely.

It is so nice to have a whole box of these wonderful ice cream in the freezer, but unfortunately they disappear very quickly.
I think one can get round cookie cutters at most hardware stores, but otherwise have Bakingtime on the net an incredible number of different shapes, and here a set with round.
