Brittle alternative to bread crumbs
A period of time we drove with gluten-free at home, and it was in many ways a challenge when one likes to bake, but there were also a few good things out of my experiments, These nuggets one of them. They are super light and low, and my boy and all his mates love them. The fast version is to buy kyllingeinderfillet and use them straight from the package. The first times I stood and cut the tendons out of every single piece, but has since found out that it does not, for they are not cool when eating.
The breadcrumbs which is a mixture of approximately half chickpea flour and risflager can be used for everything, and pga risflagerne crunching it nice. Both can be purchased in health stores and perhaps larger supermarkets. If you would rather Act on the Web you can go directly to ØkologiskSupermarked. com or Helsebixen.dk, They both have several variants of both products, make a search on the “Chickpea flour/gram flour” and “risflager”.
RECIPE ca 14 pcs
INGREDIENTS
Chicken inner fillet
Chickpea flour
Organic rice flakes
APPROACH
- Pour approximately half chickpea flour and risflager (Maybe a little more risflager) plus salt and pepper on a plate and mix
- Turn the chicken pieces and squeeze down into “the breadcrumbs”, There is no need to use, eggs or milk first.
- Pour a few cm oil on the forehead and warm up (I use organic rapeseed oil)
- Fry the pieces, turn them with a madpincet
- Place them on paper towels to soak up the fat
- I usually also just to give them some salt before I serve them
Here, served with rice and broccoli tossed in roasted sesame seeds
